Because each match eliminates exactly one player, and crowning one champion requires eliminating everyone else. So you need precisely N minus 1 eliminations.

What is a bracket reset?
In double elimination, if the losers'-bracket finalist beats the undefeated winners'-bracket finalist, both have one loss and a second decisive match (the reset) is played.
Is double elimination fairer?
Generally yes. A single upset does not end your run, better identifying the strongest competitor. The cost is roughly double the matches and time required.
How many rounds for big fields?
32 players is 5 rounds, 64 is 6, 128 is 7. Each doubling of the field adds just one round.
